Sonda’s Ragin’ Cajun Grits

He and his business partner wife, Sonda Brewster, opened the restaurant in 1996. Fans flock to the airy, art-filled space for traditional favorites like gumbo as well as recipes collected from friends like the Shepherd’s Pie and the gravy-laden Bayou Burger. These savory and spicy grits are a family favorite.

Sonda’s Ragin’ Cajun Grits



+ 8 cups water

+ 1 tsp. salt

2 cups grits

+ 6 Tbsp. butter

+ 2 tsp. Cajun seasoning (every family has their own favorite!)


Bring salted water to a boil and add grits, stirring or whisking well to prevent lumps. Lower heat and simmer for seven minutes, stirring occasionally. Add butter and Cajun seasoning, mixing well.


+ Pepper Jack cheese

Cheddar cheese

+ Bacon

+ Green onions

+ Roasted Jalapeno peppers


Fill bowls 3/4 with grits. Top each serving with 2 heaping tablespoons of pepper jack cheese, 1 tablespoon of cheddar, 1 slice chopped bacons, and 1 tablespoons chopped green onions. Serve with a roasted jalapeno on the side.
